BUFFALO MEAT RECIPES
Savory Bison Roast
Crust ingredients:
-1/2 cup Dijon mustard
-1 cup honey mustard
-10 cloves garlic chopped fine
-3 tbsp. fresh sage chopped
-3 tbsp. fresh oregano chopped
-1 tsp. black peppercorns cracked
-2 lb. sirloin tip bison roast
-paprika
-salt
-pepper
Sear the roast on a broiler or in a hot pan. Season with salt, pepper, and a little paprika. Mix crust ingredients. Top roast with crust mixture. Roast in a 275° oven until internal temperature reaches 140° for medium doneness (130° for medium-rare). Let the rest for 10 minutes before slicing. During this time, prepare a jus or gravy from the drippings.
